Ingredients:
- 500g boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 4 tbsp unsalted butter
- 4 tbsp all-purpose flour
- 3 cups whole milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 450g cheddar cheese, freshly grated
- 115g cream cheese, softened
- 1 can diced tomatoes and green chilies, drained
- 1 can black beans, rinsed and drained
- 1/2 cup chopped red onion
- 1/2 cup pickled jalapeños, sliced
- 1/4 cup chopped fresh cilantro (optional)
- Tortilla chips
Instructions:
- Season chicken, pan-fry until cooked through. Shred or dice.
- Melt butter, whisk in flour. Gradually whisk in milk. Simmer until thickened. Reduce heat, stir in seasonings, cheddar and cream cheese until smooth.
- Spread cheese sauce in baking dish. Top with chicken, tomatoes, beans, onion, and jalapeños.
- Bake until heated through and bubbly.
- Sprinkle with cilantro (if using). Serve immediately with tortilla chips.
