Ingredients:

  • 500g boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 450g cheddar cheese, freshly grated
  • 115g cream cheese, softened
  • 1 can diced tomatoes and green chilies, drained
  • 1 can black beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 1/2 cup pickled jalapeños, sliced
  • 1/4 cup chopped fresh cilantro (optional)
  • Tortilla chips

Instructions:

  1. Season chicken, pan-fry until cooked through. Shred or dice.
  2. Melt butter, whisk in flour. Gradually whisk in milk. Simmer until thickened. Reduce heat, stir in seasonings, cheddar and cream cheese until smooth.
  3. Spread cheese sauce in baking dish. Top with chicken, tomatoes, beans, onion, and jalapeños.
  4. Bake until heated through and bubbly.
  5. Sprinkle with cilantro (if using). Serve immediately with tortilla chips.
