Ingredients:

  • 8 slices bacon, preferably thick-cut (about 225g)
  • 1 head iceberg lettuce, quartered and cut into 1-inch (2.5cm) cubes
  • 1 pint cherry tomatoes, halved (about 280g)
  • 4 oz crumbled blue cheese, such as Stilton or Gorgonzola (about 115g)
  • 4 green onions, thinly sliced (about 50g)
  • 1/2 cup mayonnaise (120ml)
  • 1/4 cup sour cream (60ml)
  • 2 tablespoons buttermilk (30ml)
  • 2 tablespoons crumbled blue cheese (30g)
  • 1 tablespoon lemon juice (15ml)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 8 wooden or metal skewers (about 6-8 inches long)

Instructions:

  1. Cook bacon in a skillet until crispy. Drain on paper towels and crumble or chop.
  2. Wash and chop the lettuce and tomatoes. Crumble the blue cheese. Slice the green onions.
  3. Whisk together mayonnaise, sour cream, buttermilk, blue cheese, lemon juice, garlic powder, salt, and pepper in a bowl. Adjust seasoning to taste.
  4. Thread lettuce, tomatoes, bacon, and green onions onto skewers, alternating ingredients.
  5. Arrange skewers on a platter. Drizzle generously with blue cheese dressing. Serve immediately your Wedge Salad on a Stick.
