Ingredients:

  • 4 oz (115 g) high-quality dark chocolate (70% cocoa), finely chopped
  • 2 cups (500 ml) whole milk
  • 2 tablespoons (25 g) granulated sugar (adjust to taste)
  • 1 tablespoon (15 g) cornstarch
  • A pinch of salt
  • 1 teaspoon vanilla extract (optional)
  • Whipped cream (optional)
  • Churros or biscotti (for dipping)

Instructions:

  1. Finely chop the dark chocolate and set aside in a heatproof bowl.
  2. In a heavy-bottomed saucepan, combine whole milk, granulated sugar, cornstarch, and a pinch of salt.
  3. Place the saucepan over medium heat and whisk continuously until the mixture starts to steam (do not boil).
  4. Once steamy, remove from heat and pour half of the milk mixture over the chopped chocolate. Let it sit for 1 minute to allow the chocolate to melt.
  5. Whisk the chocolate mixture until smooth, then gradually add the remaining milk mixture, whisking until fully combined.
  6. Return the saucepan to low heat, whisking constantly until the mixture thickens to your desired consistency (approx. 1-2 minutes).
  7. Stir in the vanilla extract (if using) and pour into heatproof mugs. Serve hot with whipped cream and churros if desired.
