Ingredients:
- 4 oz (115 g) high-quality dark chocolate (70% cocoa), finely chopped
- 2 cups (500 ml) whole milk
- 2 tablespoons (25 g) granulated sugar (adjust to taste)
- 1 tablespoon (15 g) cornstarch
- A pinch of salt
- 1 teaspoon vanilla extract (optional)
- Whipped cream (optional)
- Churros or biscotti (for dipping)
Instructions:
- Finely chop the dark chocolate and set aside in a heatproof bowl.
- In a heavy-bottomed saucepan, combine whole milk, granulated sugar, cornstarch, and a pinch of salt.
- Place the saucepan over medium heat and whisk continuously until the mixture starts to steam (do not boil).
- Once steamy, remove from heat and pour half of the milk mixture over the chopped chocolate. Let it sit for 1 minute to allow the chocolate to melt.
- Whisk the chocolate mixture until smooth, then gradually add the remaining milk mixture, whisking until fully combined.
- Return the saucepan to low heat, whisking constantly until the mixture thickens to your desired consistency (approx. 1-2 minutes).
- Stir in the vanilla extract (if using) and pour into heatproof mugs. Serve hot with whipped cream and churros if desired.
