Ingredients:

  • 1 ½ cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • ¾ cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • 2 Large Eggs
  • ½ cup Whole Milk
  • ¼ cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • ½ cup Boiling Water or Hot Brewed Coffee
  • 1 ½ cups Chocolate or Vanilla Frosting
  • 1 teaspoon Cherry Extract
  • 16 oz White Chocolate or Candy Melts
  • 1–2 tablespoons Coconut Oil or Shortening
  • Red Gel Food Colouring
  • Lollipop Sticks
  • Edible Vampire Fangs (Optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Whisk dry ingredients (flour, sugar, cocoa, baking soda, baking powder, salt). In a separate bowl, whisk wet ingredients (eggs, milk, oil, vanilla). Gradually add wet to dry ingredients until just combined. Carefully stir in the boiling water or coffee. Pour batter into a prepared 9x13 inch pan.
  2. Bake for 30–35 minutes. Let the cake cool completely, then crumble the entire cake into fine crumbs in a large bowl.
  3. Add the frosting and cherry extract to the crumbs. Mix well with a spatula or hands until a uniform, dough-like consistency is achieved. Roll the mixture into uniform 1-inch balls and place them on a parchment-lined tray. Chill in the refrigerator for at least 60 minutes.
  4. Melt the white chocolate/candy melts with the coconut oil in a double boiler or microwave until perfectly smooth. Slowly mix in red gel food colouring until a vibrant crimson colour is achieved. Keep the coating warm.
  5. Dip the tip of a lollipop stick into a small amount of the melted coating, then insert it about halfway into a chilled cake ball. Return to the fridge for 5 minutes to set the stick securely.
  6. Dip the entire cake ball into the red coating, ensuring full coverage. Tap the stick gently against the container edge to allow excess coating to drip off.
  7. Insert the coated pop into a Styrofoam block or tall glass to dry. Once the coating is mostly set (about 10–15 minutes), gently insert one edible vampire fang near the top, angled slightly forward.
  8. Allow the Vampire Bite Cake Pops to set completely before serving.
