Ingredients:
- 1 pound ground beef or turkey
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (15 oz), undrained
- 1 cup tomato sauce
- 1 cup uncooked long-grain white rice
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella) for topping
- Fresh parsley or basil, chopped (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat over medium heat. Add ground beef or turkey and cook until browned (5-7 minutes).
- Add chopped onion and bell pepper to the skillet. Sauté until softened (about 3-4 minutes). Stir in minced garlic and cook for an additional minute.
- Add diced tomatoes (with juice), tomato sauce, rice, Italian seasoning, salt, and black pepper to the skillet. Mix well to combine.
- Pour the mixture into a greased 9x13-inch baking dish.
- Cover with aluminum foil and bake for 25 minutes, or until the rice is tender.
- Remove foil, sprinkle cheese on top, and bake uncovered for an additional 5-7 minutes, until cheese is melted and bubbly.
- Remove from oven, garnish with chopped herbs if desired, and serve hot.
