Ingredients:

  • 1 pound ground beef or turkey
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (15 oz), undrained
  • 1 cup tomato sauce
  • 1 cup uncooked long-grain white rice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella) for topping
  • Fresh parsley or basil, chopped (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat over medium heat. Add ground beef or turkey and cook until browned (5-7 minutes).
  3. Add chopped onion and bell pepper to the skillet. Sauté until softened (about 3-4 minutes). Stir in minced garlic and cook for an additional minute.
  4. Add diced tomatoes (with juice), tomato sauce, rice, Italian seasoning, salt, and black pepper to the skillet. Mix well to combine.
  5. Pour the mixture into a greased 9x13-inch baking dish.
  6. Cover with aluminum foil and bake for 25 minutes, or until the rice is tender.
  7. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 5-7 minutes, until cheese is melted and bubbly.
  8. Remove from oven, garnish with chopped herbs if desired, and serve hot.
