Ingredients:

  • 1 pound (450 g) 80/20 ground beef
  • 1 teaspoon kosher salt (5 g)
  • 1/2 teaspoon black pepper (2 g)
  • 4 slices cheddar cheese (optional)
  • 4 hamburger buns (white, whole wheat, or gluten-free)
  • Lettuce leaves (for topping)
  • Sliced tomatoes
  • Pickles
  • Ketchup and mustard

Instructions:

  1. Divide ground beef into four equal balls (about 4 oz/113 g each). Chill the balls in the refrigerator for 30 minutes.
  2. Preheat cast iron skillet or griddle over medium-high heat until very hot.
  3. Place a beef ball on the skillet. Use a spatula or burger press to smash down the ball to about 1/4 inch thick. Season with salt and pepper.
  4. Sear for about 2-3 minutes, until a crust forms. Flip and add cheese if using. Cook for an additional 1-2 minutes until cheese melts.
  5. Toast the hamburger buns in the skillet until golden brown.
  6. Layer lettuce, tomato, pickles, and any desired condiments on the bottom bun. Place the burger patty on top, followed by the top bun.
