Ingredients:
- 1 pound (450 g) 80/20 ground beef
- 1 teaspoon kosher salt (5 g)
- 1/2 teaspoon black pepper (2 g)
- 4 slices cheddar cheese (optional)
- 4 hamburger buns (white, whole wheat, or gluten-free)
- Lettuce leaves (for topping)
- Sliced tomatoes
- Pickles
- Ketchup and mustard
Instructions:
- Divide ground beef into four equal balls (about 4 oz/113 g each). Chill the balls in the refrigerator for 30 minutes.
- Preheat cast iron skillet or griddle over medium-high heat until very hot.
- Place a beef ball on the skillet. Use a spatula or burger press to smash down the ball to about 1/4 inch thick. Season with salt and pepper.
- Sear for about 2-3 minutes, until a crust forms. Flip and add cheese if using. Cook for an additional 1-2 minutes until cheese melts.
- Toast the hamburger buns in the skillet until golden brown.
- Layer lettuce, tomato, pickles, and any desired condiments on the bottom bun. Place the burger patty on top, followed by the top bun.
