Ingredients:
- 2 tbsp olive oil
- 1 lb ground beef (80/20 blend)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tbsp tomato paste
- 1 can diced tomatoes (14 oz)
- 1 can kidney beans (15 oz), drained and rinsed
- 1 can black beans (15 oz), drained and rinsed
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
- Salt and pepper to taste
Instructions:
- Chop vegetables and measure spices.
- In a large pot, heat olive oil over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Add onions, garlic, and bell pepper, and cook until softened, about 5 minutes.
- Stir in tomato paste, chili powder, cumin, smoked paprika, and cayenne; cook for 1-2 minutes.
- Add diced tomatoes, beans, and beef broth; stir to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 30 minutes, stirring occasionally.
- Taste and adjust seasoning with salt and pepper. Serve hot.
