Ingredients:

  • 2 tbsp olive oil
  • 1 lb ground beef (80/20 blend)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tbsp tomato paste
  • 1 can diced tomatoes (14 oz)
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 can black beans (15 oz), drained and rinsed
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • Salt and pepper to taste

Instructions:

  1. Chop vegetables and measure spices.
  2. In a large pot, heat olive oil over medium heat.
  3. Add ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  4. Add onions, garlic, and bell pepper, and cook until softened, about 5 minutes.
  5. Stir in tomato paste, chili powder, cumin, smoked paprika, and cayenne; cook for 1-2 minutes.
  6. Add diced tomatoes, beans, and beef broth; stir to combine.
  7. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes, stirring occasionally.
  8. Taste and adjust seasoning with salt and pepper. Serve hot.
