Ingredients:
- 1 lb (454g) ground chicken
- ½ cup (50g) panko breadcrumbs
- ¼ cup (25g) grated Parmesan cheese
- 1 large egg
- 3 cloves garlic, minced
- 2 tbsp finely chopped green onions
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
- ½ tsp salt
- ½ tsp black pepper
- ½ cup (120ml) hot sauce
- 3 tbsp (42g) unsalted butter
- 1 tbsp (15ml) honey
- 1 tsp (5ml) Worcestershire sauce
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, gently combine ground chicken, panko, Parmesan cheese, egg, garlic, green onions, smoked paprika, cayenne pepper, salt, and black pepper.
- Shape the mixture into 1-1.5 inch meatballs. Place evenly spaced on the prepared baking sheet.
- Bake for 18-20 minutes, or until the meatballs are cooked through and lightly browned.
- While the meatballs are baking, melt butter in a small saucepan over low heat.
- Stir in hot sauce, honey (if using), and Worcestershire sauce. Simmer for a minute to combine the flavors. Remove from heat.
- Transfer the baked meatballs to a large bowl.
- Pour the buffalo sauce over the meatballs and toss gently to coat evenly. Serve immediately.
