Ingredients:

  • 1 lb (454g) ground chicken
  • ½ cup (50g) panko breadcrumbs
  • ¼ cup (25g) grated Parmesan cheese
  • 1 large egg
  • 3 cloves garlic, minced
  • 2 tbsp finely chopped green onions
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup (120ml) hot sauce
  • 3 tbsp (42g) unsalted butter
  • 1 tbsp (15ml) honey
  • 1 tsp (5ml) Worcestershire sauce

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, gently combine ground chicken, panko, Parmesan cheese, egg, garlic, green onions, smoked paprika, cayenne pepper, salt, and black pepper.
  3. Shape the mixture into 1-1.5 inch meatballs. Place evenly spaced on the prepared baking sheet.
  4. Bake for 18-20 minutes, or until the meatballs are cooked through and lightly browned.
  5. While the meatballs are baking, melt butter in a small saucepan over low heat.
  6. Stir in hot sauce, honey (if using), and Worcestershire sauce. Simmer for a minute to combine the flavors. Remove from heat.
  7. Transfer the baked meatballs to a large bowl.
  8. Pour the buffalo sauce over the meatballs and toss gently to coat evenly. Serve immediately.
