Ingredients:
- cups cooked chicken (shredded or diced)
- tablespoons unsalted butter
- medium yellow onion, diced
- cup carrots, diced
- cup celery, diced
- cloves garlic, minced
- /3 cup all-purpose flour
- cups low-sodium chicken broth
- /2 cup heavy cream
- cup frozen peas (do not thaw)
- teaspoon dried thyme
- teaspoon dried parsley
- Salt and black pepper to taste
- cups all-purpose flour (for topping)
- tablespoon baking powder
- teaspoon salt (for topping)
- tablespoons cold unsalted butter, cubed
- /4 cup cold milk
- large egg mixed with 1 tsp water (optional egg wash)
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a 9x13 inch casserole or baking dish.
- Melt 4 tablespoons of butter in a large, deep skillet over medium heat. Add onion, carrots, and celery. Sauté until softened, about 6–8 minutes. Add garlic and cook for 1 minute until fragrant.
- Sprinkle the 1/3 cup of flour over the vegetables (this forms the roux). Stir constantly and cook for 1–2 minutes.
- Gradually whisk in the chicken broth until the mixture is smooth. Bring to a simmer, stirring constantly until the sauce thickens noticeably.
- Stir in the heavy cream, cooked chicken, frozen peas, thyme, parsley, salt, and pepper. Taste and adjust seasoning. Pour the entire filling mixture into the prepared baking dish.
- Prepare the topping: In a separate bowl, whisk together the 2 cups of flour, baking powder, and 1 teaspoon of salt. Cut in the 6 tablespoons of cold, cubed butter using a pastry blender or fingertips until the mixture resembles coarse crumbs.
- Pour in the 3/4 cup of cold milk. Stir just until a shaggy, sticky dough forms. Do not overmix.
- Drop spoonfuls of the sticky dough randomly over the surface of the hot chicken filling, leaving small gaps between the scoops. Brush lightly with the optional egg wash.
- Bake for 30–35 minutes, or until the filling is bubbly around the edges and the biscuit topping is deeply golden brown and cooked through.
- Let the TikTok Chicken Cobbler stand for 5–10 minutes before serving to allow the filling to set up slightly.
