Ingredients:

  • cups cooked chicken (shredded or diced)

  • cup celery, diced

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a 9x13 inch casserole or baking dish.
  2. Melt 4 tablespoons of butter in a large, deep skillet over medium heat. Add onion, carrots, and celery. Sauté until softened, about 6–8 minutes. Add garlic and cook for 1 minute until fragrant.
  3. Sprinkle the 1/3 cup of flour over the vegetables (this forms the roux). Stir constantly and cook for 1–2 minutes.
  4. Gradually whisk in the chicken broth until the mixture is smooth. Bring to a simmer, stirring constantly until the sauce thickens noticeably.
  5. Stir in the heavy cream, cooked chicken, frozen peas, thyme, parsley, salt, and pepper. Taste and adjust seasoning. Pour the entire filling mixture into the prepared baking dish.
  6. Prepare the topping: In a separate bowl, whisk together the 2 cups of flour, baking powder, and 1 teaspoon of salt. Cut in the 6 tablespoons of cold, cubed butter using a pastry blender or fingertips until the mixture resembles coarse crumbs.
  7. Pour in the 3/4 cup of cold milk. Stir just until a shaggy, sticky dough forms. Do not overmix.
  8. Drop spoonfuls of the sticky dough randomly over the surface of the hot chicken filling, leaving small gaps between the scoops. Brush lightly with the optional egg wash.
  9. Bake for 30–35 minutes, or until the filling is bubbly around the edges and the biscuit topping is deeply golden brown and cooked through.
  10. Let the TikTok Chicken Cobbler stand for 5–10 minutes before serving to allow the filling to set up slightly.
