Ingredients:
- 1 cup (225g) unsalted butter, melted and cooled
- 1 cup (200g) light brown sugar, firmly packed
- 1/4 cup (50g) granulated sugar
- 2 large eggs, room temperature
- 1 large egg yolk, room temperature
- 1 tablespoon pure vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1 1/4 cups M&M candies, divided
- 1/2 cup dark chocolate chips (60% cacao)
Instructions:
- Preheat oven to 350°F (180°C) and line your 9x9 inch pan with parchment paper.
- Melt the butter. Let it cool for 5 minutes until it is warm but not hot.
- Combine melted butter with brown and granulated sugars until smooth and glossy.
- Add eggs, the extra yolk, and vanilla, whisking vigorously until the mixture looks velvety.
- Fold in flour, cornstarch, baking soda, and salt until just a few streaks of flour remain.
- Fold in 1 cup of M&Ms and the chocolate chips gently.
- Press the dough into the pan until even and flat.
- Press the remaining 1/4 cup of candies into the top for a professional look.
- Cook for 25 minutes until the edges are golden and the center is set.
- Let them rest in the pan for at least 1 hour until firm enough to slice.
