Ingredients:

  • 2 small or 1 large chicken breasts (sliced horizontally)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon lemon juice (optional)
  • 2 sandwich buns
  • 2 lettuce leaves
  • 1 medium tomato, sliced
  • Pickles (optional)
  • 2 slices cheese (Swiss, cheddar, or provolone)
  • 2 tablespoons mayonnaise or aioli
  • Mustard or hot sauce (optional)

Instructions:

  1. Pound chicken to even thickness (about ½ inch). In a small bowl, whisk together olive oil, salt, pepper, garlic powder, paprika, and lemon juice (if using). Rub mixture all over the chicken breasts.
  2. Heat a skillet or grill pan over medium heat. Cook chicken for 5-6 minutes per side, or until golden brown and cooked through. Ensure the internal temperature reaches 165°F (74°C) using a meat thermometer. Let rest for a couple of minutes.
  3. Lightly butter the cut sides of the buns. Toast in the same skillet (after wiping it clean), under a broiler, or in a toaster until golden. Watch closely to prevent burning!
  4. Spread mayo or aioli on the bottom buns. Layer with lettuce, tomato slices, grilled chicken breast, cheese (if using), and pickles (if using). Add mustard or hot sauce if desired.
  5. Add the top bun and serve immediately.
