Ingredients:
- 2 small or 1 large chicken breasts (sliced horizontally)
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 1 tablespoon lemon juice (optional)
- 2 sandwich buns
- 2 lettuce leaves
- 1 medium tomato, sliced
- Pickles (optional)
- 2 slices cheese (Swiss, cheddar, or provolone)
- 2 tablespoons mayonnaise or aioli
- Mustard or hot sauce (optional)
Instructions:
- Pound chicken to even thickness (about ½ inch). In a small bowl, whisk together olive oil, salt, pepper, garlic powder, paprika, and lemon juice (if using). Rub mixture all over the chicken breasts.
- Heat a skillet or grill pan over medium heat. Cook chicken for 5-6 minutes per side, or until golden brown and cooked through. Ensure the internal temperature reaches 165°F (74°C) using a meat thermometer. Let rest for a couple of minutes.
- Lightly butter the cut sides of the buns. Toast in the same skillet (after wiping it clean), under a broiler, or in a toaster until golden. Watch closely to prevent burning!
- Spread mayo or aioli on the bottom buns. Layer with lettuce, tomato slices, grilled chicken breast, cheese (if using), and pickles (if using). Add mustard or hot sauce if desired.
- Add the top bun and serve immediately.
