Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz/170g each)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon Italian seasoning (5ml)
  • 1/2 teaspoon garlic powder (2.5ml)
  • 1/4 teaspoon salt (1.25ml)
  • 1/4 teaspoon black pepper (1.25ml)
  • 24 oz (680g) jar marinara sauce
  • 8 oz (225g) fresh mozzarella cheese, sliced
  • 1/2 cup (50g) grated Parmesan cheese
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Pound chicken breasts to an even thickness (about 1/2 inch). Season with olive oil, Italian seasoning, garlic powder, salt, and pepper.
  3. Spread a thin layer of marinara sauce evenly in the bottom of a baking dish. Place the chicken breasts on top of the sauce.
  4. Spoon the remaining marinara sauce over the chicken. Top with mozzarella slices, then sprinkle with grated Parmesan cheese.
  5. Bake for 30-35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Check with a meat thermometer - the internal temperature of the chicken should reach 165°F (74°C).
  6. Let the bake rest for a few minutes before garnishing with fresh basil (if using) and serving.
