Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz/170g each)
- 1 tablespoon olive oil (15ml)
- 1 teaspoon Italian seasoning (5ml)
- 1/2 teaspoon garlic powder (2.5ml)
- 1/4 teaspoon salt (1.25ml)
- 1/4 teaspoon black pepper (1.25ml)
- 24 oz (680g) jar marinara sauce
- 8 oz (225g) fresh mozzarella cheese, sliced
- 1/2 cup (50g) grated Parmesan cheese
- Fresh basil leaves, for garnish (optional)
Instructions:
- Preheat oven to 375°F (190°C).
- Pound chicken breasts to an even thickness (about 1/2 inch). Season with olive oil, Italian seasoning, garlic powder, salt, and pepper.
- Spread a thin layer of marinara sauce evenly in the bottom of a baking dish. Place the chicken breasts on top of the sauce.
- Spoon the remaining marinara sauce over the chicken. Top with mozzarella slices, then sprinkle with grated Parmesan cheese.
- Bake for 30-35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Check with a meat thermometer - the internal temperature of the chicken should reach 165°F (74°C).
- Let the bake rest for a few minutes before garnishing with fresh basil (if using) and serving.
