Ingredients:

  • 6 tablespoons (85g) unsalted butter, plus extra for greasing the pan
  • 1 (10-ounce/283g) package marshmallows, plus 2 cups (about 113g) extra, separated
  • 1/4 teaspoon (1.25 ml) sea salt
  • 1 teaspoon (5 ml) pure vanilla extract
  • 6 cups (170g) Rice Krispies cereal

Instructions:

  1. Grease the 9x13 inch baking pan generously with butter, or line with greaseproof paper, leaving an overhang for easy removal.
  2. In the large saucepan over medium-low heat, melt the butter.
  3. Add the majority of the marshmallows (the 10-ounce package) and the salt to the melted butter. Stir constantly until the marshmallows are completely melted and smooth.
  4. Remove the saucepan from the heat and stir in the vanilla extract.
  5. Add the Rice Krispies cereal to the marshmallow mixture. Stir until the cereal is evenly coated.
  6. Gently fold in the reserved 2 cups of marshmallows, leaving them partially melted for extra gooeyness. This is key for the perfect rice krispie treats recipe.
  7. Transfer the mixture to the prepared baking pan. Gently press down evenly (don't compact it too much; you want them light and airy).
