Ingredients:

  • 1 ½ cups (190g) all-purpose flour, plus extra for dusting
  • 3 ½ teaspoons baking powder
  • 1 teaspoon granulated sugar (5g)
  • ¼ teaspoon salt
  • 1 ¼ cups (300ml) milk
  • 1 large egg
  • 3 tablespoons (45ml) melted unsalted butter, plus more for greasing the pan
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Gently fold until just combined. A few lumps are okay!
  4. Heat a lightly oiled or buttered non-stick frying pan or griddle over medium heat.
  5. Pour ¼ cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Look for bubbles to start forming on the surface before flipping.
  7. Serve hot with your favourite toppings!
