Ingredients:
- 1 ½ cups (190g) all-purpose flour, plus extra for dusting
- 3 ½ teaspoons baking powder
- 1 teaspoon granulated sugar (5g)
- ¼ teaspoon salt
- 1 ¼ cups (300ml) milk
- 1 large egg
- 3 tablespoons (45ml) melted unsalted butter, plus more for greasing the pan
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Gently fold until just combined. A few lumps are okay!
- Heat a lightly oiled or buttered non-stick frying pan or griddle over medium heat.
- Pour ¼ cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Look for bubbles to start forming on the surface before flipping.
- Serve hot with your favourite toppings!
