Ingredients:

  • 3 very ripe bananas, mashed (about 1 ½ cups mashed)
  • ½ cup (1 stick/113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 ½ cups (192g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (50g) chopped walnuts or pecans, toasted

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or cooking spray.
  2. In a large mixing bowl, mash the ripe bananas until mostly smooth with some small chunks remaining.
  3. In a separate bowl, whisk together the melted butter and sugar until combined. Add the beaten eggs and vanilla extract; whisk until smooth.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
  6. Gently fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan and spread evenly. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs attached.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
