Ingredients:
- 3 very ripe bananas, mashed (about 1 ½ cups mashed)
- ½ cup (1 stick/113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 ½ cups (192g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (50g) chopped walnuts or pecans, toasted
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or cooking spray.
- In a large mixing bowl, mash the ripe bananas until mostly smooth with some small chunks remaining.
- In a separate bowl, whisk together the melted butter and sugar until combined. Add the beaten eggs and vanilla extract; whisk until smooth.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Gently fold in the chopped nuts.
- Pour the batter into the prepared loaf pan and spread evenly. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs attached.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
