Ingredients:

  • ½ lb (225g) ground beef
  • ¼ cup (30g) onion, finely chopped
  • 1 clove garlic, minced
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp olive oil or butter
  • 4 large eggs
  • ¼ cup (60ml) milk
  • Salt and freshly ground black pepper, to taste
  • 4 large (10-inch/25cm) flour tortillas
  • 1 cup (100g) shredded cheddar cheese or Mexican blend cheese
  • ½ cup (120ml) salsa (optional)

Instructions:

  1. Heat olive oil in the skillet over medium heat. Add chopped onion and cook until softened. Add the minced garlic and cook until fragrant.
  2. Add the ground beef to the skillet. Break it up with a spatula and cook until browned and cooked through. Drain off any excess fat.
  3. Stir in the chili powder, cumin, paprika (if using), salt, and pepper. Mix well and remove from the skillet. Set aside.
  4. Whisk together the eggs, milk, salt, and pepper in a mixing bowl.
  5. Pour the egg mixture into the same skillet over medium-low heat. Cook, stirring gently, until the eggs are just set but still soft.
  6. Briefly warm the tortillas in a dry skillet or microwave to make them pliable.
  7. Divide the cooked beef, scrambled eggs, and shredded cheese evenly among the warmed tortillas. Add salsa and any other optional toppings as desired.
  8. Fold in the sides of each tortilla, then roll up burrito-style, tucking in the filling as you go.
  9. For a crispy exterior, place the burritos seam-side down in a hot skillet and cook for 1-2 minutes per side, or until golden brown (optional).
