Ingredients:
- ½ lb (225g) ground beef
- ¼ cup (30g) onion, finely chopped
- 1 clove garlic, minced
- ½ teaspoon chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon smoked paprika (optional)
- Salt and freshly ground black pepper, to taste
- 1 tbsp olive oil or butter
- 4 large eggs
- ¼ cup (60ml) milk
- Salt and freshly ground black pepper, to taste
- 4 large (10-inch/25cm) flour tortillas
- 1 cup (100g) shredded cheddar cheese or Mexican blend cheese
- ½ cup (120ml) salsa (optional)
Instructions:
- Heat olive oil in the skillet over medium heat. Add chopped onion and cook until softened. Add the minced garlic and cook until fragrant.
- Add the ground beef to the skillet. Break it up with a spatula and cook until browned and cooked through. Drain off any excess fat.
- Stir in the chili powder, cumin, paprika (if using), salt, and pepper. Mix well and remove from the skillet. Set aside.
- Whisk together the eggs, milk, salt, and pepper in a mixing bowl.
- Pour the egg mixture into the same skillet over medium-low heat. Cook, stirring gently, until the eggs are just set but still soft.
- Briefly warm the tortillas in a dry skillet or microwave to make them pliable.
- Divide the cooked beef, scrambled eggs, and shredded cheese evenly among the warmed tortillas. Add salsa and any other optional toppings as desired.
- Fold in the sides of each tortilla, then roll up burrito-style, tucking in the filling as you go.
- For a crispy exterior, place the burritos seam-side down in a hot skillet and cook for 1-2 minutes per side, or until golden brown (optional).
