Ingredients:
- oz extra-sharp Cheddar Cheese, freshly grated
- oz cream cheese, softened
- /2 cup mayonnaise
- /2 cup pimentos, drained and chopped
- tablespoons finely minced red onion
- teaspoon Worcestershire sauce
- teaspoon Dijon mustard
- /4 to 1/2 teaspoon hot sauce (e.g., Tabasco)
- Pinch of cayenne pepper (optional)
- /4 teaspoon freshly ground black pepper
- Salt, to taste
Instructions:
- Prepare the cheese: Grate the sharp cheddar cheese coarsely. Ensure the cream cheese is softened to room temperature to prevent lumps.
- Combine Wet Ingredients: In a large mixing bowl, combine the softened cream cheese, mayonnaise, Worcestershire sauce, Dijon mustard, and hot sauce. Whisk vigorously until completely smooth and uniform.
- Incorporate Aromatics: Stir in the finely minced red onion and the chopped, well-drained pimentos. Mix well.
- Fold in Cheese: Add the freshly grated cheddar cheese to the wet mixture. Using a rubber spatula, gently fold the cheese into the base. Avoid overmixing; the goal is a creamy base with distinct shreds of cheese remaining.
- Season and Taste: Sprinkle in the cayenne pepper and black pepper. Taste the mixture and adjust salt or add more hot sauce as needed.
- Chill (Recommended): Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld together for the best results.
- Serve: Serve chilled or allow to sit at room temperature for 15 minutes before serving for optimal spreadability. Serve with crackers or on toasted bread.
