Ingredients:

  • 1 lb ground pork sausage
  • 6 large eggs, whisked
  • 2 tbsp whole milk
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 12 small flour tortillas (6-inch diameter)
  • 1.5 cups shredded sharp cheddar cheese
  • 2 tbsp olive oil
  • 4 oz canned green chilies, drained

Instructions:

  1. In a large skillet over medium-high heat, brown the sausage, breaking it into small crumbles until no pink remains (about 8 minutes).
  2. Lower the heat to medium-low. Pour in the whisked eggs and milk. Gently fold the eggs into the sausage until they are just set but still slightly moist.
  3. Stack the tortillas and wrap them in a damp paper towel. Microwave for 30–45 seconds until they are warm and pliable.
  4. Place 2 tablespoons of the sausage and egg mixture in the center of each tortilla. Top with a generous sprinkle of cheese and green chilies. Roll the tortilla tightly around the filling.
  5. Place each roll seam-side down on a baking sheet lined with parchment paper. Lightly brush the tops with olive oil.
  6. Bake at 425°F (218°C) for 12–15 minutes, or until the edges are golden brown and the cheese is bubbling.
