Ingredients:
- 1 lb ground pork sausage
- 6 large eggs, whisked
- 2 tbsp whole milk
- 0.5 tsp kosher salt
- 0.25 tsp black pepper
- 12 small flour tortillas (6-inch diameter)
- 1.5 cups shredded sharp cheddar cheese
- 2 tbsp olive oil
- 4 oz canned green chilies, drained
Instructions:
- In a large skillet over medium-high heat, brown the sausage, breaking it into small crumbles until no pink remains (about 8 minutes).
- Lower the heat to medium-low. Pour in the whisked eggs and milk. Gently fold the eggs into the sausage until they are just set but still slightly moist.
- Stack the tortillas and wrap them in a damp paper towel. Microwave for 30–45 seconds until they are warm and pliable.
- Place 2 tablespoons of the sausage and egg mixture in the center of each tortilla. Top with a generous sprinkle of cheese and green chilies. Roll the tortilla tightly around the filling.
- Place each roll seam-side down on a baking sheet lined with parchment paper. Lightly brush the tops with olive oil.
- Bake at 425°F (218°C) for 12–15 minutes, or until the edges are golden brown and the cheese is bubbling.
