Ingredients:
- 1 lb lean ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup beef broth
- 15 corn tortillas
- 16 oz sour cream
- 2 cups salsa
- 3 cups shredded Mexican blend cheese
Instructions:
- Place a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and onions are translucent (about 7-10 minutes). Drain excess grease.
- Stir in the minced garlic, chili powder, cumin, salt, and pepper. Toast the spices for 1 minute until fragrant.
- Pour in the beef broth and simmer for 5 minutes until the liquid reduces into a thick sauce.
- Spread a thin layer of salsa on the bottom of a 9x13 inch baking dish to prevent sticking.
- Place a single layer of corn tortillas, overlapping slightly, to cover the bottom of the dish.
- Spread 1/3 of the seasoned beef mixture evenly over the tortillas.
- Dollop 1/3 of the sour cream over the beef and spread into a velvety layer.
- Sprinkle 1/3 of the shredded cheese over the sour cream.
- Repeat the sequence of tortillas, beef, sour cream, and cheese until all ingredients are used.
- Bake in the oven for 30 minutes until the cheese is melted and the edges are golden brown.
