Ingredients:

  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup beef broth
  • 15 corn tortillas
  • 16 oz sour cream
  • 2 cups salsa
  • 3 cups shredded Mexican blend cheese

Instructions:

  1. Place a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and onions are translucent (about 7-10 minutes). Drain excess grease.
  2. Stir in the minced garlic, chili powder, cumin, salt, and pepper. Toast the spices for 1 minute until fragrant.
  3. Pour in the beef broth and simmer for 5 minutes until the liquid reduces into a thick sauce.
  4. Spread a thin layer of salsa on the bottom of a 9x13 inch baking dish to prevent sticking.
  5. Place a single layer of corn tortillas, overlapping slightly, to cover the bottom of the dish.
  6. Spread 1/3 of the seasoned beef mixture evenly over the tortillas.
  7. Dollop 1/3 of the sour cream over the beef and spread into a velvety layer.
  8. Sprinkle 1/3 of the shredded cheese over the sour cream.
  9. Repeat the sequence of tortillas, beef, sour cream, and cheese until all ingredients are used.
  10. Bake in the oven for 30 minutes until the cheese is melted and the edges are golden brown.
