Ingredients:
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- 1 large ripe pineapple, peeled, cored and cut into 1-inch thick slices
- Fresh mint leaves for garnish (optional)
Instructions:
- In a mixing bowl, combine honey, soy sauce, lime juice, chili powder, and cayenne pepper. Whisk until well blended.
- Place pineapple slices in a shallow dish. Pour marinade over pineapple, ensuring each slice is coated. Cover and refrigerate for 30 minutes.
- Preheat grill over medium heat (about 350°F/180°C).
- Remove pineapple from marinade, reserving marinade for basting. Place pineapple slices on the grill. Grill for 4-5 minutes on each side, basting with reserved marinade, until grill marks appear and pineapple is slightly caramelized.
- Arrange grilled pineapple on a serving platter. Garnish with fresh mint leaves if desired.
