Ingredients:

  • 1 cup granulated sugar (200 g)
  • 1 cup water (240 ml)
  • 1 tablespoon vanilla extract (optional)
  • Zest from 1 lemon or 1 orange (optional)
  • Fresh herbs (e.g., mint, basil) – a small handful (optional)

Instructions:

  1. In a medium saucepan, mix sugar and water.
  2. Place the saucepan over medium heat.
  3. Stir the mixture until the sugar fully dissolves – this typically takes about 5 minutes.
  4. If using, add flavor enhancers during the heating process.
  5. Continue to heat for an additional 2-3 minutes, allowing flavors to infuse (if applicable).
  6. Remove from heat and let the syrup cool completely.
  7. If flavor enhancers were added, pour the syrup through a fine mesh strainer into a heatproof container.
  8. Transfer the simple syrup into a clean jar or bottle. Seal tightly and refrigerate.
