Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 cup (240ml) warm water (about 110°F/43°C)
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 tbsp granulated sugar
  • ½ tsp salt
  • 2 tbsp unsalted butter, melted
  • 24 Rolos candies
  • ½ cup (120g) baking soda
  • 4 cups (960ml) water
  • 2 tbsp coarse sea salt

Instructions:

  1. In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. Whisk in melted butter and salt.
  3. Gradually add flour, mixing until a dough forms.
  4. Knead for 5-7 minutes until smooth.
  5. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for 30 minutes.
  6. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment.
  7. Divide the dough into small balls (about 1 ounce each).
  8. Flatten each ball and place a Rolo in the center. Pinch the dough around it to seal.
  9. In a small pot, bring 4 cups of water and baking soda to a gentle boil.
  10. Using a slotted spoon, carefully place each pretzel into the baking soda bath for 30 seconds.
  11. Transfer to the prepared baking sheet.
  12. Sprinkle with coarse sea salt.
  13. Bake for 12-15 minutes or until golden brown.
  14. Allow to cool slightly before serving.
