Ingredients:

  • 4 cups Chex cereal (Rice, Corn, or Wheat)
  • 2 cups mini pretzels
  • 1 cup salted peanuts
  • 1 cup M&Ms
  • 1 cup butterscotch chips
  • 1/2 cup unsalted butter
  • 1/2 cup light brown sugar, packed
  • 1/4 cup corn syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda

Instructions:

  1. Combine all dry ingredients (cereals, pretzels, peanuts, M&Ms, and butterscotch chips) in a large mixing bowl. Toss gently to combine.
  2. In a saucepan, melt butter over medium heat. Add brown sugar and corn syrup. Stir constantly until the sugar is dissolved and the mixture comes to a gentle boil.
  3. Reduce heat to low and simmer for 5 minutes, stirring occasionally. Be careful not to burn it!
  4. Remove from heat and stir in vanilla extract and baking soda. The mixture will foam up slightly – this is normal.
  5. Pour the glaze over the dry ingredients and stir gently but thoroughly until everything is evenly coated. Make sure you get all the nooks and crannies!
  6. Spread the mixture in a single layer on a baking sheet lined with parchment paper.
  7. Bake in a preheated oven at 250°F (120°C) for 20 minutes, stirring every 5 minutes to prevent burning.
  8. Remove from the oven and let cool completely on the baking sheet. Once cool, break apart any large clumps.
  9. Serve immediately or store in an airtight container for up to a week.
