Ingredients:
- 4 cups Chex cereal (Rice, Corn, or Wheat)
- 2 cups mini pretzels
- 1 cup salted peanuts
- 1 cup M&Ms
- 1 cup butterscotch chips
- 1/2 cup unsalted butter
- 1/2 cup light brown sugar, packed
- 1/4 cup corn syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
Instructions:
- Combine all dry ingredients (cereals, pretzels, peanuts, M&Ms, and butterscotch chips) in a large mixing bowl. Toss gently to combine.
- In a saucepan, melt butter over medium heat. Add brown sugar and corn syrup. Stir constantly until the sugar is dissolved and the mixture comes to a gentle boil.
- Reduce heat to low and simmer for 5 minutes, stirring occasionally. Be careful not to burn it!
- Remove from heat and stir in vanilla extract and baking soda. The mixture will foam up slightly – this is normal.
- Pour the glaze over the dry ingredients and stir gently but thoroughly until everything is evenly coated. Make sure you get all the nooks and crannies!
- Spread the mixture in a single layer on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 250°F (120°C) for 20 minutes, stirring every 5 minutes to prevent burning.
- Remove from the oven and let cool completely on the baking sheet. Once cool, break apart any large clumps.
- Serve immediately or store in an airtight container for up to a week.
