Ingredients:

  • 1 lb (450g) ground beef (ideally 80/20 for flavour)
  • 1 tablespoon olive oil (optional, if beef is very lean)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced into ½-inch (1.25cm) cubes
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon chili powder (adjust to taste)
  • Salt and freshly ground black pepper, to taste
  • ½ cup (120ml) beef or chicken broth (low sodium preferred)
  • 1 cup (30g) baby spinach or chopped kale (optional)

Instructions:

  1. Cook ground beef in the skillet over medium-high heat, breaking it up with a spoon. Drain off any excess fat and transfer beef to a plate.
  2. If needed, add olive oil to the skillet. Sauté diced onion until softened. Add minced garlic and cook until fragrant.
  3. Add diced sweet potatoes to the skillet. Season with smoked paprika, cumin, chili powder, salt, and pepper. Stir to coat the sweet potatoes with the spices.
  4. Pour in beef or chicken broth. Cover the skillet and simmer until sweet potatoes are tender, stirring occasionally.
  5. Return the cooked ground beef to the skillet. Stir to combine with the sweet potatoes.
  6. If using, stir in spinach or kale and cook until wilted.
  7. Taste and adjust seasoning as needed. Serve hot with your choice of toppings.
