Ingredients:
- 1 lb (450g) ground beef (ideally 80/20 for flavour)
- 1 tablespoon olive oil (optional, if beef is very lean)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced into ½-inch (1.25cm) cubes
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- ¼ teaspoon chili powder (adjust to taste)
- Salt and freshly ground black pepper, to taste
- ½ cup (120ml) beef or chicken broth (low sodium preferred)
- 1 cup (30g) baby spinach or chopped kale (optional)
Instructions:
- Cook ground beef in the skillet over medium-high heat, breaking it up with a spoon. Drain off any excess fat and transfer beef to a plate.
- If needed, add olive oil to the skillet. Sauté diced onion until softened. Add minced garlic and cook until fragrant.
- Add diced sweet potatoes to the skillet. Season with smoked paprika, cumin, chili powder, salt, and pepper. Stir to coat the sweet potatoes with the spices.
- Pour in beef or chicken broth. Cover the skillet and simmer until sweet potatoes are tender, stirring occasionally.
- Return the cooked ground beef to the skillet. Stir to combine with the sweet potatoes.
- If using, stir in spinach or kale and cook until wilted.
- Taste and adjust seasoning as needed. Serve hot with your choice of toppings.
