Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized chunks
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup vegetable oil for frying
  • Salt and pepper, to taste
  • 1 cup freshly squeezed orange juice
  • Zest of 1 orange
  • 1/2 cup granulated sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions:

  1. Season chicken pieces with salt and pepper; let sit for 30 minutes.
  2. Set up a breading station with flour in one bowl and beaten eggs in another.
  3. Heat vegetable oil in a frying pan over medium-high heat.
  4. Dredge chicken pieces in flour, dip in egg, and fry until golden brown.
  5. Remove and drain on paper towels.
  6. In a saucepan, combine orange juice, zest, sugar, soy sauce, and vinegar, bringing to a simmer.
  7. Stir in the cornstarch mixture until thickened.
  8. Pour sauce over fried chicken in a large bowl and toss to coat evenly.
  9. Serve hot, garnished with sliced green onions or sesame seeds if desired.
