Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized chunks
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup vegetable oil for frying
- Salt and pepper, to taste
- 1 cup freshly squeezed orange juice
- Zest of 1 orange
- 1/2 cup granulated sugar
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions:
- Season chicken pieces with salt and pepper; let sit for 30 minutes.
- Set up a breading station with flour in one bowl and beaten eggs in another.
- Heat vegetable oil in a frying pan over medium-high heat.
- Dredge chicken pieces in flour, dip in egg, and fry until golden brown.
- Remove and drain on paper towels.
- In a saucepan, combine orange juice, zest, sugar, soy sauce, and vinegar, bringing to a simmer.
- Stir in the cornstarch mixture until thickened.
- Pour sauce over fried chicken in a large bowl and toss to coat evenly.
- Serve hot, garnished with sliced green onions or sesame seeds if desired.
