Ingredients:
- 2 cups (475 ml) fresh pineapple chunks, cored
- 2 oranges, peeled, segmented, and seeds removed
- 2 cups (230 g) green grapes, halved
- 2 cups (230 g) red grapes, halved
- 2 cups (230 g) strawberries, hulled and quartered
- 1 cup (115 g) blueberries
- 1 (11-ounce/312g) can mandarin orange segments, drained
- 1 cup (240 ml) full-fat sour cream
- 2 tablespoons (30 ml) honey (or maple syrup)
- 1 teaspoon (5 ml) vanilla extract
- 1/4 teaspoon (1 ml) ground cinnamon (optional)
Instructions:
- Wash and thoroughly dry all fresh fruit. Cut the pineapple, oranges, grapes, and strawberries into bite-sized pieces. Drain the mandarin oranges.
- In a small bowl, whisk together the sour cream, honey (or maple syrup), vanilla extract, and cinnamon (if using) until smooth and well combined.
- Gently fold the prepared fruit into the sour cream dressing until evenly coated.
- Cover the fruit salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled and enjoy! Garnish with fresh mint sprigs if desired.
