Ingredients:

  • 1 pint (475ml) cherry tomatoes, halved
  • 2 medium avocados, pitted and diced
  • 1/2 cup (120ml) red onion, finely diced
  • 1/2 cup (120ml) fresh cilantro, roughly chopped
  • 4 ounces (115g) feta cheese, crumbled
  • 2 tablespoons (30ml) extra virgin olive oil
  • 1 tablespoon (15ml) lime juice, freshly squeezed (about 1 lime)
  • 1 clove garlic, minced
  • 1/4 teaspoon (1ml) salt, or to taste
  • 1/4 teaspoon (1ml) black pepper, or to taste
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Halve the cherry tomatoes and place them in a large mixing bowl.
  2. Add the diced avocado and red onion to the bowl with the tomatoes.
  3. Gently fold in the chopped cilantro, being careful not to mash the avocado.
  4. In a small bowl, whisk together the olive oil, lime juice, minced garlic, salt, pepper, and red pepper flakes (if using).
  5. Pour the dressing over the salad and gently toss to combine, ensuring all ingredients are coated.
  6. Crumble the feta cheese over the salad just before serving.
  7. Serve immediately or chill for later.
