Ingredients:
- 1 pint (475ml) cherry tomatoes, halved
- 2 medium avocados, pitted and diced
- 1/2 cup (120ml) red onion, finely diced
- 1/2 cup (120ml) fresh cilantro, roughly chopped
- 4 ounces (115g) feta cheese, crumbled
- 2 tablespoons (30ml) extra virgin olive oil
- 1 tablespoon (15ml) lime juice, freshly squeezed (about 1 lime)
- 1 clove garlic, minced
- 1/4 teaspoon (1ml) salt, or to taste
- 1/4 teaspoon (1ml) black pepper, or to taste
- Pinch of red pepper flakes (optional)
Instructions:
- Halve the cherry tomatoes and place them in a large mixing bowl.
- Add the diced avocado and red onion to the bowl with the tomatoes.
- Gently fold in the chopped cilantro, being careful not to mash the avocado.
- In a small bowl, whisk together the olive oil, lime juice, minced garlic, salt, pepper, and red pepper flakes (if using).
- Pour the dressing over the salad and gently toss to combine, ensuring all ingredients are coated.
- Crumble the feta cheese over the salad just before serving.
- Serve immediately or chill for later.
