Ingredients:
- 2 cups (300g) cubed watermelon
- 2 cups (300g) hulled and quartered strawberries
- 1 cup (150g) blueberries
- 1 cup (150g) green grapes, halved (seedless)
- 1 cup (150g) cantaloupe, cubed
- 1 cup (150g) honeydew melon, cubed
- 1/2 cup (75g) fresh mint leaves, chopped
- 2 tablespoons (30ml) fresh lime juice
- 2 tablespoons (30ml) honey
- 1 tablespoon (15ml) fresh orange juice
- 1/4 teaspoon (1ml) lime zest
Instructions:
- Wash and dry all the fruit thoroughly. Chop the watermelon, strawberries, cantaloupe, and honeydew into bite-sized cubes. Halve the grapes.
- In a large mixing bowl, gently combine the cubed watermelon, strawberries, blueberries, grapes, cantaloupe, honeydew, and chopped mint.
- In a small bowl, whisk together the lime juice, honey, orange juice, and lime zest until well combined and smooth.
- Pour the honey-lime dressing over the fruit salad. Gently toss to coat all the fruit evenly.
- Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled. Garnish with extra mint leaves, if desired.
