Ingredients:

  • 2 cups (300g) cubed watermelon
  • 2 cups (300g) hulled and quartered strawberries
  • 1 cup (150g) blueberries
  • 1 cup (150g) green grapes, halved (seedless)
  • 1 cup (150g) cantaloupe, cubed
  • 1 cup (150g) honeydew melon, cubed
  • 1/2 cup (75g) fresh mint leaves, chopped
  • 2 tablespoons (30ml) fresh lime juice
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15ml) fresh orange juice
  • 1/4 teaspoon (1ml) lime zest

Instructions:

  1. Wash and dry all the fruit thoroughly. Chop the watermelon, strawberries, cantaloupe, and honeydew into bite-sized cubes. Halve the grapes.
  2. In a large mixing bowl, gently combine the cubed watermelon, strawberries, blueberries, grapes, cantaloupe, honeydew, and chopped mint.
  3. In a small bowl, whisk together the lime juice, honey, orange juice, and lime zest until well combined and smooth.
  4. Pour the honey-lime dressing over the fruit salad. Gently toss to coat all the fruit evenly.
  5. Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled. Garnish with extra mint leaves, if desired.
