Ingredients:

  • 1 ½ cups (225g) strawberries, hulled and halved
  • 1 cup (150g) mango, peeled and diced
  • 1 medium banana (about 120g), peeled
  • Juice of 1 orange (about ¼ cup / 60ml)
  • 2 tablespoons (30ml) honey or maple syrup (optional, to taste)
  • 1 teaspoon lemon juice
  • ¼ cup (60ml) water, coconut water, or fruit juice
  • ½ cup (75g) fresh blueberries or raspberries (optional)
  • Mint leaves, finely chopped (optional)
  • ¼ cup (60g) plain Greek yoghurt (optional)

Instructions:

  1. Wash and chop all fruit as needed. Juice the orange and lemon.
  2. In a blender, combine strawberries, mango, banana, orange juice, lemon juice, water/coconut water, and honey/maple syrup. Blend until smooth.
  3. Taste the mixture and adjust sweetness with more honey or lemon, if needed.
  4. Stir in optional ingredients like whole or chopped berries, mint, or whisk in yoghurt for a creamy swirl appearance.
  5. Pour the mixture into popsicle moulds using a jug or funnel, leaving a small gap at the top for expansion.
  6. Carefully insert sticks into the centre of each mould.
  7. Freeze for at least 4–6 hours, or overnight until solid.
  8. To release the pops, briefly run the moulds under warm water for 10–15 seconds, then gently pull out the pops.
