Ingredients:

  • 1 cup (150g) Frozen strawberries
  • 2 tbsp (30ml) Simple syrup or agave nectar
  • 1 tbsp (15ml) Freshly squeezed lime juice
  • 1 cup (240ml) Pineapple juice, chilled
  • 1/2 cup (120ml) Cream of coconut
  • 1 cup (140g) Ice cubes
  • 1/2 cup (75g) Frozen pineapple chunks

Instructions:

  1. Prepare the Crimson Foundation: Place the frozen strawberries, simple syrup, and lime juice into a blender. Pulse until the mixture is a smooth, thick puree. Pour half of this mixture into the bottom of two 12-oz glasses.
  2. Blend the Tropical Clouds: Rinse the blender jar quickly. Add the pineapple juice, cream of coconut, and ice (or frozen pineapple). Blend on high until the mixture is completely smooth and frothy, resembling a thick white cloud.
  3. Execute the Lava Flow: Slowly pour the coconut-pineapple mixture over the red strawberry base. The density of the strawberry puree will cause it to be forced upward against the glass, creating the signature lava streaks.
