Ingredients:
- 2 ripe bananas, mashed (approx. 240g / 8.5oz)
- 1 cup fresh strawberries, chopped (plus extra for garnish, approx. 150g / 5.3oz)
- 2 ½ cups all-purpose flour (315g / 11.1oz)
- 1 tablespoon baking powder (12g / 0.4oz)
- ½ teaspoon baking soda (2.5g / 0.09oz)
- ½ teaspoon salt (3g / 0.1oz)
- 1 cup granulated sugar (200g / 7oz)
- ½ cup packed brown sugar (100g / 3.5oz)
- ½ cup unsalted butter, softened (113g / 4oz)
- ½ cup vegetable oil (120ml / 4 fl oz) - or another ½ cup softened butter (113g / 4oz)
- 3 large eggs
- 1 teaspoon vanilla extract (5ml / 0.17 fl oz)
- 1 cup buttermilk (240ml / 8 fl oz) - or 1 cup milk (240ml / 8 fl oz) + 1 tablespoon lemon juice (15ml / 0.5 fl oz), let sit for 5 minutes
- 8 oz cream cheese, softened (226g / 8oz)
- ½ cup unsalted butter, softened (113g / 4oz)
- 3–4 cups powdered sugar (360-480g / 12.7-16.9oz)
- 1 teaspoon vanilla extract (5ml / 0.17 fl oz)
- 1–2 tablespoons heavy cream or milk (15-30ml / 0.5-1 fl oz), as needed
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour baking pan(s).
- Mash bananas. Chop strawberries and lightly toss with 1 tablespoon of flour.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
- In a large bowl, cream butter, oil (or butter), and both sugars until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and mashed bananas.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined - don't overmix.
- Gently fold in the chopped strawberries.
- Pour batter into the prepared pan(s). Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan(s) for 10 minutes, then transfer to a wire rack to cool completely before frosting.
- Beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar, then vanilla and cream/milk, until desired consistency is reached.
- Spread frosting evenly over the cooled cake. Garnish with fresh strawberry slices or banana chips, if desired.
