Ingredients:

  • 2 large egg whites (approximately 60ml / ¼ cup)
  • 1 teaspoon olive oil (5ml)
  • 1 cup fresh spinach, roughly chopped (30g / 1 oz)
  • ¼ cup crumbled feta cheese (30g / 1 oz)
  • ¼ teaspoon dried oregano (1g)
  • Salt and freshly ground black pepper to taste
  • 1 whole-wheat tortilla (approx. 25cm / 10 inch diameter)

Instructions:

  1. Heat olive oil in a non-stick skillet over medium heat. Add spinach and sauté until wilted, about 2-3 minutes. Season with salt, pepper, and oregano.
  2. In a small mixing bowl, whisk egg whites until lightly frothy.
  3. Pour egg whites into the skillet with the spinach. Cook, stirring occasionally, until set but still slightly moist.
  4. Warm the tortilla (microwave for 10 seconds or briefly heat in a dry skillet). Place the spinach and egg white mixture in the centre of the tortilla. Sprinkle with crumbled feta cheese.
  5. Fold in the sides of the tortilla, then roll tightly from the bottom up, like a burrito. Serve immediately.
