Ingredients:
- 2 large egg whites (approximately 60ml / ¼ cup)
- 1 teaspoon olive oil (5ml)
- 1 cup fresh spinach, roughly chopped (30g / 1 oz)
- ¼ cup crumbled feta cheese (30g / 1 oz)
- ¼ teaspoon dried oregano (1g)
- Salt and freshly ground black pepper to taste
- 1 whole-wheat tortilla (approx. 25cm / 10 inch diameter)
Instructions:
- Heat olive oil in a non-stick skillet over medium heat. Add spinach and sauté until wilted, about 2-3 minutes. Season with salt, pepper, and oregano.
- In a small mixing bowl, whisk egg whites until lightly frothy.
- Pour egg whites into the skillet with the spinach. Cook, stirring occasionally, until set but still slightly moist.
- Warm the tortilla (microwave for 10 seconds or briefly heat in a dry skillet). Place the spinach and egg white mixture in the centre of the tortilla. Sprinkle with crumbled feta cheese.
- Fold in the sides of the tortilla, then roll tightly from the bottom up, like a burrito. Serve immediately.
