Ingredients:
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lime juice
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 tsp honey
- 2 lbs jumbo shrimp, peeled and deveined
- 2 tbsp fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions:
- In a glass bowl, whisk together the olive oil, lime juice, minced garlic, smoked paprika, cayenne, salt, pepper, and honey.
- Toss the shrimp in the marinade until thoroughly coated and refrigerate for exactly 30 minutes.
- Thread the shrimp onto skewers, leaving a small gap between each shrimp, or place them in a grill basket.
- Preheat your grill to medium-high heat.
- Place skewers on the grate and grill for 2–3 minutes per side until the shrimp turn opaque pink with mahogany-colored char marks.
- Remove from heat immediately and garnish with fresh chopped cilantro and a squeeze of lime juice.
