Ingredients:

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tsp honey
  • 2 lbs jumbo shrimp, peeled and deveined
  • 2 tbsp fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions:

  1. In a glass bowl, whisk together the olive oil, lime juice, minced garlic, smoked paprika, cayenne, salt, pepper, and honey.
  2. Toss the shrimp in the marinade until thoroughly coated and refrigerate for exactly 30 minutes.
  3. Thread the shrimp onto skewers, leaving a small gap between each shrimp, or place them in a grill basket.
  4. Preheat your grill to medium-high heat.
  5. Place skewers on the grate and grill for 2–3 minutes per side until the shrimp turn opaque pink with mahogany-colored char marks.
  6. Remove from heat immediately and garnish with fresh chopped cilantro and a squeeze of lime juice.
