Ingredients:
- 1 box (15.25 oz / 432g) spice cake mix
- 1 cup (240ml) canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup (115g) unsalted butter, melted
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/2 cup (90g) chocolate chips (optional)
- 1/2 cup (60g) chopped nuts (walnuts or pecans) (optional)
- 1/2 tsp (2g) ground cinnamon (for extra spice, optional)
Instructions:
- Preheat the oven to 350°F (180°C).
- In a large mixing bowl, combine the spice cake mix, melted butter, canned pumpkin, eggs, and vanilla extract. Mix until well combined and a thick dough forms.
- If using optional mix-ins (chocolate chips, nuts, etc.), fold them into the dough.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 15-20 minutes until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
