Ingredients:
- 400g spaghetti
- Salt (to taste for boiling water)
- 150g pancetta or guanciale, diced
- 3 large eggs
- 100g grated Parmesan cheese or Pecorino Romano
- Freshly cracked black pepper (to taste)
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Bring a large pot of salted water to a boil and cook spaghetti until al dente.
- Cook the diced pancetta in a frying pan over medium heat until crispy, then remove from heat.
- In a mixing bowl, whisk together eggs, cheese, and a generous amount of black pepper.
- Once pasta is cooked, reserve some pasta water, drain spaghetti, and add hot spaghetti to the pan with the fried pancetta.
- Remove from heat and quickly pour in the egg and cheese mixture, tossing to create a creamy sauce, adding reserved pasta water as needed.
- Plate the spaghetti, topping with additional cheese, black pepper, and chopped parsley if desired.
