Ingredients:

  • 400g spaghetti
  • Salt (to taste for boiling water)
  • 150g pancetta or guanciale, diced
  • 3 large eggs
  • 100g grated Parmesan cheese or Pecorino Romano
  • Freshly cracked black pepper (to taste)
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente.
  2. Cook the diced pancetta in a frying pan over medium heat until crispy, then remove from heat.
  3. In a mixing bowl, whisk together eggs, cheese, and a generous amount of black pepper.
  4. Once pasta is cooked, reserve some pasta water, drain spaghetti, and add hot spaghetti to the pan with the fried pancetta.
  5. Remove from heat and quickly pour in the egg and cheese mixture, tossing to create a creamy sauce, adding reserved pasta water as needed.
  6. Plate the spaghetti, topping with additional cheese, black pepper, and chopped parsley if desired.
