Ingredients:
- 1 ½ cups 2% or 4% Cottage Cheese
- 1 tablespoon fresh Lime Juice
- ½ teaspoon Ground Cumin
- ½ teaspoon Smoked Paprika
- ¼ teaspoon Sea Salt (or to taste)
- Pinch of Freshly Ground Black Pepper
- 1 cup Black Beans, canned (rinsed and drained)
- 1 cup Corn Kernels (thawed if frozen)
- ¼ cup Red Onion, finely diced
- ¼ cup Fresh Cilantro, chopped
- 1 small Jalapeño Pepper, seeded & minced
- ½ medium Avocado, diced (for garnish)
- Drizzle of Hot Sauce (for garnish)
- 1 teaspoon Pepitas or Everything Bagel Seasoning (for garnish)
Instructions:
- Prepare Mix-ins: Rinse and thoroughly drain the black beans. If using frozen corn, run under warm water to thaw quickly. Dice the red onion and mince the jalapeño (remembering to remove the seeds for less heat). Chop the cilantro.
- Create the Seasoned Base: In a medium bowl, combine the cottage cheese, lime juice, cumin, smoked paprika, salt, and pepper. Whisk gently until just combined and creamy.
- Fold in Vegetables: Gently fold the drained black beans, corn, diced red onion, cilantro, and minced jalapeño into the seasoned cottage cheese mixture. Taste and adjust seasoning as needed.
- Portion and Chill (Recommended): Divide the mixture evenly into two serving bowls. Cover and chill in the refrigerator for at least 15 minutes to allow flavours to integrate.
- Garnish and Serve: Just before serving, top each bowl with diced avocado, a drizzle of your preferred hot sauce, and a sprinkle of pepitas or Everything Bagel Seasoning for texture.
