Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon granulated sugar
  • ½ cup unsalted butter, chilled and cubed
  • 4-6 tablespoons ice water
  • 2 cups cooked and mashed sweet potatoes
  • ¾ cup granulated sugar
  • ½ cup evaporated milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ teaspoon ground ginger

Instructions:

  1. In a mixing bowl, whisk together flour, salt, and sugar.
  2. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water until the dough comes together.
  4. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  5. Preheat the oven to 350°F (175°C).
  6. Cook sweet potatoes until fork-tender, then mash until smooth.
  7. In a large bowl, combine mashed sweet potatoes, sugar, evaporated milk, eggs, vanilla, spices, and salt. Mix until well combined.
  8. Roll out the chilled pie dough on a floured surface to fit the pie dish.
  9. Place the dough in the pie dish and trim excess.
  10. Pour the sweet potato filling into the crust, smoothing the top.
  11. Bake in the preheated oven for 45 minutes or until the filling is set and the crust is golden brown.
  12. Allow pie to cool at room temperature before slicing.
  13. Serve with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
