Ingredients:
- 1 ½ cups all-purpose flour

- 1 tablespoon granulated sugar
- ½ cup unsalted butter, chilled and cubed
- 4-6 tablespoons ice water
- 2 cups cooked and mashed sweet potatoes
- ¾ cup granulated sugar
- ½ cup evaporated milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- ¼ teaspoon ground ginger
Instructions:
- In a mixing bowl, whisk together flour, salt, and sugar.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Gradually add ice water until the dough comes together.
- Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- Cook sweet potatoes until fork-tender, then mash until smooth.
- In a large bowl, combine mashed sweet potatoes, sugar, evaporated milk, eggs, vanilla, spices, and salt. Mix until well combined.
- Roll out the chilled pie dough on a floured surface to fit the pie dish.
- Place the dough in the pie dish and trim excess.
- Pour the sweet potato filling into the crust, smoothing the top.
- Bake in the preheated oven for 45 minutes or until the filling is set and the crust is golden brown.
- Allow pie to cool at room temperature before slicing.
- Serve with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
