- 1 cup granulated sugar
- 2 tablespoons cornmeal
- 1 tablespoon all-purpose flour
- ¼ teaspoon salt
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- 4 large eggs
- ½ cup evaporated milk
Instructions:
- Combine flour and salt in a mixing bowl.
- Cut in chilled butter until the mixture resembles coarse crumbs.
- Gradually add ice water, stirring until dough forms.
- Shape into a disk, wrap in plastic, and chill for at least 30 minutes.
- In a mixing bowl, whisk together sugar, cornmeal, flour, and salt.
- Add vinegar, vanilla, and eggs; beat until well combined.
- Stir in evaporated milk until smooth.
- Preheat the oven to 350°F (175°C).
- Roll out the chilled dough on a floured surface and fit it into the pie pan.
- Pour the filling into the prepared crust.
- Bake for 40-45 minutes, or until the filling is set and jiggles slightly in the center.
- Cool the pie on a wire rack before slicing.
