Ingredients:

  • 1 cup granulated sugar
  • 2 tablespoons cornmeal
  • 1 tablespoon all-purpose flour
  • ¼ teaspoon salt
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • ½ cup evaporated milk

Instructions:

  1. Combine flour and salt in a mixing bowl.
  2. Cut in chilled butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, stirring until dough forms.
  4. Shape into a disk, wrap in plastic, and chill for at least 30 minutes.
  5. In a mixing bowl, whisk together sugar, cornmeal, flour, and salt.
  6. Add vinegar, vanilla, and eggs; beat until well combined.
  7. Stir in evaporated milk until smooth.
  8. Preheat the oven to 350°F (175°C).
  9. Roll out the chilled dough on a floured surface and fit it into the pie pan.
  10. Pour the filling into the prepared crust.
  11. Bake for 40-45 minutes, or until the filling is set and jiggles slightly in the center.
  12. Cool the pie on a wire rack before slicing.
