Ingredients:
- 3 cups (375g) all-purpose flour
- 1/2 cup (115g) unsalted butter, chilled and cubed
- 1 tbsp (12g) granulated sugar
- 1 tsp (5g) salt
- 1 packet (7g) active dry yeast
- 1/4 cup (60ml) warm water (110°F)
- 1/2 cup (120g) full-fat sour cream, room temperature
- 1 large (50g) egg
- 2 large (33g) egg yolks
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Whisk the warm water and yeast in a small bowl and let sit for 5 minutes until foamy.
- In the food processor, pulse flour, salt, and sugar. Add cubed chilled butter and process for 1 minute until the mixture resembles coarse sand.
- In a separate bowl, whisk the sour cream, egg, egg yolks, vanilla, and the yeast mixture until smooth.
- Pour the wet mixture into the food processor. Pulse just until a sticky dough forms; do not overprocess.
- Turn the dough onto a lightly floured surface, shape into a disk, and cover with a damp cloth.
- Refrigerate the dough for at least 2 hours to relax the gluten and firm the butter.
