Ingredients:

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup (90g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup (170g) milk chocolate chips
  • 6 cups (approximately 283g) mini marshmallows

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk until well combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.
  6. Pour the brownie batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Remove from oven and immediately sprinkle the chocolate chips evenly over the hot brownie base. Let sit for 5 minutes to soften, then spread into an even layer.
  9. Cover the melted chocolate with an even layer of mini marshmallows.
  10. Place the pan under the broiler for 1-2 minutes, watching very carefully, until the marshmallows are toasted and golden brown.
  11. Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into 16 bars for perfect smores brownie bars.
