Ingredients:
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3/4 cup (90g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup (170g) milk chocolate chips
- 6 cups (approximately 283g) mini marshmallows
Instructions:
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides.
- In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk until well combined.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.
- Pour the brownie batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Remove from oven and immediately sprinkle the chocolate chips evenly over the hot brownie base. Let sit for 5 minutes to soften, then spread into an even layer.
- Cover the melted chocolate with an even layer of mini marshmallows.
- Place the pan under the broiler for 1-2 minutes, watching very carefully, until the marshmallows are toasted and golden brown.
- Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into 16 bars for perfect smores brownie bars.
