Ingredients:

  • 4 cups (600g) fresh blackberries
  • 1 1/2 cups (300g) granulated sugar
  • 2 tbsp (30ml) freshly squeezed lemon juice
  • 1 drop vanilla extract

Instructions:

  1. Combine the blackberries and lemon juice in your heavy pot.
  2. Mash the berries with a potato masher until they burst and release their juices. Note: Leave some chunks for a rustic feel
  3. Stir in the granulated sugar over medium heat.
  4. Bring the mixture to a simmer, stirring constantly until the sugar dissolves and the liquid clears.
  5. Increase the heat slightly to maintain a steady, rolling boil.
  6. Boil for about 38 mins until the mixture reaches 220°F (104°C).
  7. Perform the wrinkle test by dropping a bit of jam on a frozen plate and pushing it with your finger.
  8. Remove from heat once the jam sheets off the spoon in a thick, heavy ribbon.
  9. Let the Blackberry Jam cool for 10 mins before pouring it into jars.
