Ingredients:
- 4 cups (600g) fresh blackberries
- 1 1/2 cups (300g) granulated sugar
- 2 tbsp (30ml) freshly squeezed lemon juice
- 1 drop vanilla extract
Instructions:
- Combine the blackberries and lemon juice in your heavy pot.
- Mash the berries with a potato masher until they burst and release their juices. Note: Leave some chunks for a rustic feel
- Stir in the granulated sugar over medium heat.
- Bring the mixture to a simmer, stirring constantly until the sugar dissolves and the liquid clears.
- Increase the heat slightly to maintain a steady, rolling boil.
- Boil for about 38 mins until the mixture reaches 220°F (104°C).
- Perform the wrinkle test by dropping a bit of jam on a frozen plate and pushing it with your finger.
- Remove from heat once the jam sheets off the spoon in a thick, heavy ribbon.
- Let the Blackberry Jam cool for 10 mins before pouring it into jars.
