Ingredients:

  • 2 pounds beef sirloin or chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup beef broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Fresh parsley for garnish (optional)

Instructions:

  1. Pat the beef cubes dry with paper towels. Season with salt, pepper, garlic powder, and onion powder.
  2. In a heavy-bottomed skillet, heat olive oil over medium-high heat. Sear the beef in batches until browned on all sides. Transfer to slow cooker.
  3. In the same skillet, add beef broth and Worcestershire sauce. Scrape up browned bits from the bottom of the pan. Whisk in flour until smooth.
  4. Pour the broth mixture over the beef in the slow cooker. Add thyme and parsley.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until beef is tender.
  6. About 30 minutes before serving, stir in heavy cream. Thicken the gravy if desired with additional flour mixed with water.
  7. Taste for seasoning and adjust as necessary. Garnish with fresh parsley before serving.
