Ingredients:
- 2 pounds beef sirloin or chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup beef broth
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Fresh parsley for garnish (optional)
Instructions:
- Pat the beef cubes dry with paper towels. Season with salt, pepper, garlic powder, and onion powder.
- In a heavy-bottomed skillet, heat olive oil over medium-high heat. Sear the beef in batches until browned on all sides. Transfer to slow cooker.
- In the same skillet, add beef broth and Worcestershire sauce. Scrape up browned bits from the bottom of the pan. Whisk in flour until smooth.
- Pour the broth mixture over the beef in the slow cooker. Add thyme and parsley.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until beef is tender.
- About 30 minutes before serving, stir in heavy cream. Thicken the gravy if desired with additional flour mixed with water.
- Taste for seasoning and adjust as necessary. Garnish with fresh parsley before serving.
