Ingredients:
- 4 – 1.8 kg Boneless Beef Chuck Roast, trimmed of excess fat
- 1 large Yellow Onion, sliced thickly
- 6 cloves Garlic, minced
- 240 mL Beef Broth (low sodium)
- 60 mL Red Wine Vinegar
- 30 mL Freshly squeezed Lemon Juice
- 10 mL Dried Oregano
- 5 mL Dried Thyme
- 5 mL Dried Rosemary, crushed
- 2 Bay Leaves
- 10 mL Kosher Salt, adjust to taste
- 5 mL Black Pepper, freshly ground
- 6 – 8 pieces Pita Bread or Flatbread
- Tzatziki Sauce, as desired
- 1/2 medium Red Onion, thinly sliced
- 2 Roma Tomatoes, chopped
- 1/2 English Cucumber, diced (optional)
Instructions:
- Pat the chuck roast dry. Generously rub all sides with half of the salt and pepper. Heat 1 tablespoon of oil in a large skillet over medium-high heat until shimmering. Sear the beef for 2–3 minutes per side until a rich, deep brown crust forms. Transfer the seared beef to the slow cooker basin.
- Scatter the sliced onions and minced garlic around the beef in the slow cooker.
- In a separate bowl, whisk together the beef broth, red wine vinegar, lemon juice, dried oregano, thyme, rosemary, bay leaves, and the remaining salt and pepper.
- Pour the liquid mixture over the beef. Cover the slow cooker and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is fork-tender and easily shreds apart.
- Carefully remove the beef roast from the slow cooker and place it on a cutting board or shallow dish. Discard the bay leaves. Using two forks (or a hand mixer on low speed), shred the beef completely.
- Return the shredded beef to the slow cooker. Stir to coat the meat thoroughly in the cooking juices. Allow the beef to sit for 15–30 minutes on the 'Keep Warm' setting to absorb the flavors.
- (Optional) For crispier edges, spread the shredded beef onto a baking sheet and broil on high for 2–4 minutes, watching constantly until the edges begin to crisp and turn golden brown.
- Warm the pita bread lightly. Assemble the gyros by piling the shredded Slow Cooker Beef Gyros onto the warm pita, then topping generously with Tzatziki sauce, sliced red onion, chopped tomatoes, and diced cucumber.
