Ingredients:

  • 12 oz (340 g) sausages (pork, chicken, or vegetarian)
  • 1 lb (450 g) baby potatoes, halved
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • Fresh parsley for garnish (optional)

Instructions:

  1. Slice the sausages into bite-sized pieces, halve the potatoes, and slice the bell peppers and onion. Mince the garlic.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat and cook the sausage pieces until browned, about 5-7 minutes.
  3. Remove the cooked sausages and set aside. In the same skillet, add the remaining olive oil, potatoes, and onions, cooking for 10 minutes until softened.
  4. Add garlic, bell peppers, and spices to the skillet, sautéing for an additional 5 minutes until tender.
  5. Return the sausages to the skillet, stir well, and cook for 2-3 minutes to heat through.
  6. Remove from heat, garnish with parsley, and serve hot.
