Ingredients:
- 12 oz (340 g) sausages (pork, chicken, or vegetarian)
- 1 lb (450 g) baby potatoes, halved
- 1 medium red bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt
- Fresh parsley for garnish (optional)
Instructions:
- Slice the sausages into bite-sized pieces, halve the potatoes, and slice the bell peppers and onion. Mince the garlic.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat and cook the sausage pieces until browned, about 5-7 minutes.
- Remove the cooked sausages and set aside. In the same skillet, add the remaining olive oil, potatoes, and onions, cooking for 10 minutes until softened.
- Add garlic, bell peppers, and spices to the skillet, sautéing for an additional 5 minutes until tender.
- Return the sausages to the skillet, stir well, and cook for 2-3 minutes to heat through.
- Remove from heat, garnish with parsley, and serve hot.
