Ingredients:

  • 1 lb Italian sausages (sweet or spicy, your choice)
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 bell peppers (any color), thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1/4 cup chicken or vegetable broth
  • Fresh basil, for garnish (optional)

Instructions:

  1. Slice the onion and bell peppers. Mince the garlic.
  2. Heat the olive oil in a large skillet over medium heat. Add the sausages and cook until browned, about 5-7 minutes. Remove sausages from skillet and slice into bite-sized pieces.
  3. In the same skillet, add the sliced onion and cook until translucent, about 3-4 minutes. Add the bell peppers and sauté for an additional 5 minutes until softened. Stir in the garlic, oregano, and red pepper flakes; cook for 1 minute.
  4. Return the sliced sausages to the skillet. Pour in the broth, stir to combine, and let simmer for 10 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  5. Remove from heat and garnish with fresh basil, if using. Serve hot with your favorite sides.
