Ingredients:

  • 1.5 lbs boneless skinless chicken thighs, sliced into thin strips
  • 3 large bell peppers, sliced into strips
  • 1 medium red onion, sliced into wedges
  • 2 tbsp avocado oil
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Line a large rimmed baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl or resealable plastic bag, combine avocado oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Add sliced chicken thighs, bell peppers, and red onions to the bowl. Toss and massage until all ingredients are evenly coated in the seasoning.
  4. Spread the mixture across the prepared baking sheet in a single, thin layer to ensure proper charring.
  5. Roast in a preheated oven at 400°F (200°C) for 18–22 minutes, or until chicken is opaque with charred tips and onions are blackened at the edges.
  6. Remove from oven and immediately drizzle fresh lime juice over the sizzling ingredients.
  7. Garnish with chopped fresh cilantro and serve.
