Ingredients:
- 1.5 lbs boneless skinless chicken thighs, sliced into thin strips
- 3 large bell peppers, sliced into strips
- 1 medium red onion, sliced into wedges
- 2 tbsp avocado oil
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
Instructions:
- Line a large rimmed baking sheet with parchment paper to prevent sticking.
- In a large mixing bowl or resealable plastic bag, combine avocado oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Add sliced chicken thighs, bell peppers, and red onions to the bowl. Toss and massage until all ingredients are evenly coated in the seasoning.
- Spread the mixture across the prepared baking sheet in a single, thin layer to ensure proper charring.
- Roast in a preheated oven at 400°F (200°C) for 18–22 minutes, or until chicken is opaque with charred tips and onions are blackened at the edges.
- Remove from oven and immediately drizzle fresh lime juice over the sizzling ingredients.
- Garnish with chopped fresh cilantro and serve.
