Ingredients:
- 1 pound (450g) salmon fillet, skin on or off, cut into 2-3 portions
- 1 large head of broccoli (about 1 pound / 450g), cut into florets
- 1 red bell pepper, sliced
- 2 tablespoons olive oil or vegetable oil
- Sesame seeds, for garnish (optional)
- Sliced green onions, for garnish (optional)
- 1/4 cup (60ml) soy sauce (low sodium preferred)
- 2 tablespoons honey or maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1 teaspoon cornstarch (mixed with 1 tablespoon water)
Instructions:
- Whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes (if using) in a bowl. Whisk in cornstarch slurry.
- Toss broccoli florets and sliced bell pepper with olive oil, salt, and pepper in a large bowl.
- Arrange the broccoli and bell pepper in a single layer on the prepared baking sheet.
- Bake at 400°F (200°C) for 7 minutes.
- Remove the baking sheet from the oven. Place salmon fillets amongst the vegetables.
- Brush salmon and broccoli with half of the prepared Asian glaze. Return to the oven and bake for another 5-8 minutes, or until salmon is cooked through and flakes easily with a fork, and broccoli is crisp-tender.
- Remove from oven and brush with remaining glaze.
- Garnish with sesame seeds and sliced green onions (if using). Serve immediately.
