Ingredients:

  • 1 pound (450g) salmon fillet, skin on or off, cut into 2-3 portions
  • 1 large head of broccoli (about 1 pound / 450g), cut into florets
  • 1 red bell pepper, sliced
  • 2 tablespoons olive oil or vegetable oil
  • Sesame seeds, for garnish (optional)
  • Sliced green onions, for garnish (optional)
  • 1/4 cup (60ml) soy sauce (low sodium preferred)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon cornstarch (mixed with 1 tablespoon water)

Instructions:

  1. Whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes (if using) in a bowl. Whisk in cornstarch slurry.
  2. Toss broccoli florets and sliced bell pepper with olive oil, salt, and pepper in a large bowl.
  3. Arrange the broccoli and bell pepper in a single layer on the prepared baking sheet.
  4. Bake at 400°F (200°C) for 7 minutes.
  5. Remove the baking sheet from the oven. Place salmon fillets amongst the vegetables.
  6. Brush salmon and broccoli with half of the prepared Asian glaze. Return to the oven and bake for another 5-8 minutes, or until salmon is cooked through and flakes easily with a fork, and broccoli is crisp-tender.
  7. Remove from oven and brush with remaining glaze.
  8. Garnish with sesame seeds and sliced green onions (if using). Serve immediately.
