Ingredients:

  • 1 (16 ounce / 450g) can refried beans
  • 1 tablespoon / 15 ml taco seasoning (low sodium)
  • 3 medium avocados, mashed
  • 1/4 cup / 60 ml red onion, finely diced
  • 2 tablespoons / 30 ml lime juice, freshly squeezed
  • 1/4 teaspoon / 1.25 ml salt
  • 1/4 teaspoon / 1.25 ml black pepper
  • 16 ounces / 450g sour cream (full-fat or light)
  • 1 packet / 28g taco seasoning
  • 1 (16 ounce / 450g) jar salsa (mild, medium, or hot – your choice!)
  • 1 pound / 450g ground beef (or ground turkey)
  • 1 tablespoon / 15 ml olive oil
  • 1/2 cup / 120 ml yellow onion, chopped
  • 2 tablespoons / 30 ml taco seasoning (low sodium)
  • 2 cups / 200g shredded cheddar cheese (or Monterey Jack)
  • 1/2 cup / 60 ml black olives, sliced
  • 1/4 cup / 30 ml green onions, chopped
  • 1/4 cup / 30 ml jalapenos, sliced (optional)

Instructions:

  1. Combine refried beans and taco seasoning. Spread evenly on the bottom of the serving dish.
  2. Mash avocados and mix with red onion, lime juice, salt, and pepper. Spread evenly over the refried beans.
  3. Stir taco seasoning into sour cream until well combined. Spread over the guacamole.
  4. Pour salsa evenly over the seasoned sour cream.
  5. Brown ground beef in a skillet with olive oil and onion. Drain any excess fat. Stir in taco seasoning. Let cool slightly before layering over the salsa.
  6. Sprinkle shredded cheese evenly over the layer of salsa (or cooled ground beef).
  7. Garnish with sliced black olives, green onions, and jalapenos (if using).
  8. Cover and refrigerate for at least 30 minutes to allow flavours to meld.
  9. Serve chilled with tortilla chips.
