Ingredients:
- 1 (16 ounce / 450g) can refried beans
- 1 tablespoon / 15 ml taco seasoning (low sodium)
- 3 medium avocados, mashed
- 1/4 cup / 60 ml red onion, finely diced
- 2 tablespoons / 30 ml lime juice, freshly squeezed
- 1/4 teaspoon / 1.25 ml salt
- 1/4 teaspoon / 1.25 ml black pepper
- 16 ounces / 450g sour cream (full-fat or light)
- 1 packet / 28g taco seasoning
- 1 (16 ounce / 450g) jar salsa (mild, medium, or hot – your choice!)
- 1 pound / 450g ground beef (or ground turkey)
- 1 tablespoon / 15 ml olive oil
- 1/2 cup / 120 ml yellow onion, chopped
- 2 tablespoons / 30 ml taco seasoning (low sodium)
- 2 cups / 200g shredded cheddar cheese (or Monterey Jack)
- 1/2 cup / 60 ml black olives, sliced
- 1/4 cup / 30 ml green onions, chopped
- 1/4 cup / 30 ml jalapenos, sliced (optional)
Instructions:
- Combine refried beans and taco seasoning. Spread evenly on the bottom of the serving dish.
- Mash avocados and mix with red onion, lime juice, salt, and pepper. Spread evenly over the refried beans.
- Stir taco seasoning into sour cream until well combined. Spread over the guacamole.
- Pour salsa evenly over the seasoned sour cream.
- Brown ground beef in a skillet with olive oil and onion. Drain any excess fat. Stir in taco seasoning. Let cool slightly before layering over the salsa.
- Sprinkle shredded cheese evenly over the layer of salsa (or cooled ground beef).
- Garnish with sliced black olives, green onions, and jalapenos (if using).
- Cover and refrigerate for at least 30 minutes to allow flavours to meld.
- Serve chilled with tortilla chips.
