Ingredients:

  • 4 cups (600g) fresh blackberries
  • 2 tbsp (30ml) fresh lemon juice
  • 2 cups (400g) granulated white sugar

Instructions:

  1. Place the fresh blackberries in a saucepan over medium heat. Stir occasionally for 5–8 minutes until the berries break down and release their juices.
  2. Press the hot mixture through a fine-mesh sieve into a clean bowl, using a spatula to push all the pulp through. Discard the seeds.
  3. Return the seedless pulp and lemon juice to the saucepan.
  4. Stir in the sugar over medium heat until completely dissolved.
  5. Increase heat to medium-high and bring the mixture to a rolling boil.
  6. Boil the jam for 10–15 minutes, stirring frequently to prevent the sugar from burning on the bottom.
  7. Perform the plate test: drop a small spoonful onto a frozen plate; if it wrinkles when pushed with your finger, the jam is done.
