Ingredients:
- 1 cup (240 g) cottage cheese
- 2 large eggs
- 1 cup (120 g) all-purpose flour
- 2 tablespoons (30 g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ¼ cup (60 ml) milk
- 2 tablespoons (30 g) unsalted butter for frying
Instructions:
- In a mixing bowl, combine cottage cheese and eggs.
- Whisk until well blended.
- In another bowl, mix flour, sugar, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, stirring just until combined.
- Add milk and vanilla extract, mixing until the batter is smooth.
- Heat a non-stick skillet over medium heat and add butter.
- Pour batter onto the skillet (about ¼ cup for each pancake).
- Cook until bubbles form on the surface and edges look set, about 3-4 minutes.
- Flip and cook until golden brown, about 2-3 minutes more.
- Serve warm with your favorite toppings.
