Ingredients:

  • 1 cup (240 g) cottage cheese
  • 2 large eggs
  • 1 cup (120 g) all-purpose flour
  • 2 tablespoons (30 g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup (60 ml) milk
  • 2 tablespoons (30 g) unsalted butter for frying

Instructions:

  1. In a mixing bowl, combine cottage cheese and eggs.
  2. Whisk until well blended.
  3. In another bowl, mix flour, sugar, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring just until combined.
  5. Add milk and vanilla extract, mixing until the batter is smooth.
  6. Heat a non-stick skillet over medium heat and add butter.
  7. Pour batter onto the skillet (about ¼ cup for each pancake).
  8. Cook until bubbles form on the surface and edges look set, about 3-4 minutes.
  9. Flip and cook until golden brown, about 2-3 minutes more.
  10. Serve warm with your favorite toppings.
